After downing a hot cup of ellick (coffee), I get started on the thing I know everyone is waiting for: a warm, filling breakfast.
When you have a long day of working outside ahead of you, a simple bowl of cereal just won’t cut it. You need something that sticks to your ribs, feeds a crowd, and fills the whole farmhouse with a rich, savory aroma.

This recipe is the definition of "Soil to Shelf" cozy comfort cooking. It’s deep, savory, incredibly filling, and relies heavily on fresh ingredients you can pull right from your backyard or local farmstand.
In our kitchen, this weekend's breakfast casserole was built around a classic, foolproof combination: cubed potates (already cooked) and rich, savory diced ham. The potatoes form a beautiful, golden foundational layer that completely soaks up the rich farm-fresh eggs, while the ham adds the perfect salty, smoky bite to every single forkful. I like to use ingredients that I already have available from the garden, coop, or fridge for this! It just makes it so much easier. No running to the store for this or that.
When it's all baked together in a classic farmhouse baking dish, it develops those beautiful, crispy golden edges that will have your family racing to the table.
The Beauty of a "Clean-Out-The-Fridge" Recipe
While I love the potato-and-ham combination, the absolute best part of this heritage-style recipe is that it is entirely customizable. True homestead cooking isn't about running to the grocery store for exact, rigid ingredients; it’s about honoring what you have on hand right now. If your fridge or garden looks a little different this week, you can easily mix it up:

Ingredients:
2 cups cubed potatoes (potatoes should already be cooked)
1.5 cups cooked ham, diced
9 small farm-fresh eggs (straight from the Hunt's Farms coop!)
1.5 cups shredded sharp cheddar cheese
Salt and black pepper to taste
Step-by-Step Directions:
Prep the Oven: Preheat your oven to 375°F (190°C). Grease a 8-inch baking dish with butter.
Build the Foundation: Layer your potatoes evenly across the bottom of the dish. Season them lightly with a pinch of salt and pepper.
Add the Fillings: Scatter your diced ham and 1 cup of the shredded cheddar cheese evenly over the potato layer.
Whisk the Liquid Gold: In a large mixing bowl, crack your eggs. Whisk them together with the salt and pepper until thoroughly mixed. Note: if you want to add other seasonings, this is also the time to do that.
